Pumpkin bread with seeds

Pumpkin bread with seeds

This pumpkin bread is the ideal autumn comfort food, with spices, cinnamon, nutmeg, ginger, and cloves, and elevated with the nutty, cheesy flavor of Red Star® Nutritional Yeast. Ideal for breakfast, as a snack, or even as a light dinner side.

Preparation

1. Preheat your oven to 175°C (350°F). Lightly grease a loaf pan or line it with parchment paper.

2. In a large bowl, whisk together the flour, Red Star nutritional yeast, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.

3. In a separate bowl, mix together the pumpkin puree, sugar, oil, plant-based milk, and vanilla extract until smooth.

4. Stir the wet ingredients into the dry ingredients. Mix gently until just combined, being careful not to overmix.

5. Pour the batter into the prepared pan and smooth the surface with a spatula. Sprinkle evenly with the seeds, pressing them in lightly.

6. Bake for 45 to minutes.

7. Remove the loaf from the oven and let it cool completely before slicing.

Chef’s Tip: Store the pumpkin bread in an airtight container at room temperature for up to 3 days. For longer storage, slice and freeze individual pieces for up to a month.
