Preparation
1. Heat the olive oil in a large saucepan over medium heat. Add the ground beef and cook for 5 to 7 minutes, until well browned, breaking it up with a spoon. Season lightly with salt and pepper.
2. Push the beef to one side of the pot and add the diced red onion. Sauté for 3-4 minutes until translucent. Then, mix in the minced garlic and stir everything together.
3. Add the carrots, red and green bell peppers, and cook for 6 minutes until the vegetables are tender.
4. Sprinkle with chili powder, cumin, paprika, cayenne pepper (optional), oregano, salt, and black pepper. Mix well to coat the vegetables with the spices.
5. Stir in the tomato puree, crushed tomatoes, vegetable broth, and kidney beans. Bring to a simmer.
6. Reduce the heat and simmer the chili, covered, stirring occasionally, for 20 to 25 minutes.
7. Stir in the corn and Red Star nutritional yeast 5 minutes before the end of cooking. Nutritional yeast will add a cheesy, savory flavor to the dish.
8. Serve and garnish: Ladle the chili into bowls and garnish with fresh cilantro leaves. You can also stir in the juice of just one lime.
